Honey Roasted Sweet Potatoes

Ingredients

  • 2-3 large sweet potatoes
  • 2 tbsp olive oil
  • 2 tbsp salted butter
  • 1/4 cup good honey
  • 1 tbsp salt

Instructions

  1. Grease a glass Pyrex dish to hold peeled and cubed sweet potatoes
  2. Coat in olive oil and honey and mix well to coat evenly. Dab the butter around and add plenty of salt
  3. Bake at 425° for one hour uncovered
